Vegan Corn Dogs

I’ve been super unhealthy lately. Most of my friends would say “how can you be unhealthy, YOU’RE VEGAN!” Yes, by cutting out the meat and dairy products I would say it adds to my health but if I’m eating tofurky and daiya cheese pizza all the time, I would get just as fat and unhealthy like I was going to Mc Donalds regularly. OK maybe not that bad, but it’s pretty awful. Balance is essential. Last week, I was watching the Cooking Channel and got a craving for corn dogs. Kinda weird, but I was hungry and wanted something really unhealthy and comforting. I sated my hunger by making vegan corn dogs with whatever I had in the house. They came out pretty tasty. Crunchy on the outside golden brown with a warm dog in the middle. A little dip in some brown mustard, YUMMY!  I got my unhealthy munchies satisfied and hope to begin a more healthy week. I began the week by eating sauteed kale with ginger and garlic in a little bit of olive oil & hiking with my new pup. Hope I can keep this up.

If you are feeling the need to feed your indulgent vegan side here is my recipe:



3 Tofurky Sausages
6 Skewers
1/4 cup Yellow Cornmeal
1/4 cup Flour
1/2 teaspoon salt
1 1/2 tablespoon egg substitute
3 tablespoon warm water
1/2 tablespoon of sugar
1/2 teaspoon of baking powder
1/2 cup soymilk
1/2 tablespoon of melted shortening
2 tablespoon nutritional yeast
1 teaspoon of red pepper
1 tablespoon of garlic powder
oil 350 degrees

I like to cut each tofurky in half to make them cute bite size. Next skewer each dog. In one bowl mix cornmeal, flour, salt, sugar,nutritional yeast, red pepper, & garlic powder. In another container mix the egg substitute with warm water. This should equal one egg. Next mix soymilk, & shortening, with the egg substitute mixture. After mixing wet and dry ingredients individually, begin mixing them together. Dunk the hot dog into the mixture and fry in the 350 degrees oil for about a minute then dunk them in the batter again. Feel free to do this process to acquire the thickness of the dough to hotdog ratio that you prefer. Fry the dog till it turns golden brown on the outside. Enjoy!
