Vegan Quiche

Baked a vegan quiche today actually 3 6″ pies! Here is my newest recipe. I might adjust it to make it a little lower calorie next time. It did come out pretty good though.

1/2 tsp curry powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp tumeric
1 tbsp olive oil
1 stalk of broccoli florets chopped
1 medium onion chopped
10 mushrooms chopped
2 cups chopped baby spinach
2 cloves of garlic chopped
1 package of firm tofu
1/2 package of follow your heart cheese
1/4 cup of soy milk or alternative milk
2 tbsp tofutti cream cheese

salt to taste about 1/2 tsp
pepper to taste about 1/4 tsp

whole foods 6″ pie crust 3 pack

preheat oven to 350 degrees
heat pan with olive oil and saute onions and mushroom for 7-10 minutes until onion is lightly browned. Add garlic, broccoli, and spinach and continue to saute until spinach is cooked down.

In a small bowl add curry powder, onion powder, garlic powder, tumeric and mix together.

In food processor or blender, process tofu, vegan cheese, soy milk, and soy cream cheese. Add dry ingredients to wet ingredients. Add salt and pepper to taste.

Pour mixture into 3 6″ pie crusts and bake for 50-65 minutes at 350 degrees. Keep and eye on it until it is crust & top is golden brown. Make sure to let cool a little before digging in.

      Thank you! It tasted really good. I’m eating the last pie today. I might try making a standard 9″ quiche next week and try to come up with a lower calorie version.

    yaaay! So it can be done! haha I love quiche but I haven’t had any at all since going vegan. This’ll be a really fun weekend cooking project =P

      Me too! I hadn’t had quiche for years. I really missed it and attempted to figure this out. Let me know how it goes!
